-1 kg of fresh okra -1/2 cup of roasted chickpea flour -1/3 cup of shredded coconut (fresh or frozen) -1/3 cup of fried shallots -1 tsp of Kashmiri red chilli powder -1 tsp of amchur (dried mango powder) -1 tbsp of roasted cumin powder -2 tbsp of coriander powder -4 big cloves of garlic -Handful of coriander leaves along with stalks -1 tbsp oil plus more for cooking -Juice of half a lemon -1 onion (sliced) -1 tsp of cumin seeds -1/2 tsp of asafoetida (hing) -Salt

Firstly, wipe all the okras with a wet cloth and cut the tops off.

In a blender, add the chickpea flour, shallots, coconut, coconut, garlic and spices to make a coarse powder.

Stuff the okras with this coarse spice mix.

In a hot pain, add oil, jeera and onions and sautee for a bit.
