Spicy Peanut Noodles

Digital creator and certified nutrition coach Adhya S (@auraartofhealthyliving) took to Instagram to share a recipe of Spicy Peanut Noodles and here’s how you can make it at home. 

Ingredients

150g rice noodles Veggies of choice 150g tofu 1 tbsp peanut butter 1-inch ginger 4-5 soaked red chillies 5-6 cloves of garlic 1 tsp soy sauce 1 tsp salt 1 tsp honey ½ cup water

Step 1

1. Soak the rice noodles in warm  water for 15 mins.

Step 2

2. Crumble the tofu & add some salt to it. 3. Fry it in 1-2 tsp oil until crisp. 

Step 3

4. For the sauce, add peanut butter, ginger, red chillies, garlic, soy sauce, salt, honey, and water to a blender and blend until smooth. 

Step 4

5. Heat oil in the same pan, add veggies and stir-fry for 2 mins. 6. Now, add salt, soaked noodles, sauce, and 1 cup of water to the pan.

Step 5

7. Once the sauce starts to simmer, add the tofu and mix everything well. 8. Cover and cook for 10 mins.

Serve Hot & Enjoy!
