Ahead of the festival of colours, Chef Aruna Vijay shared a great recipe to make thandai at home. Prepared without using any premix, this drink tastes lip-smacking.

• 2 tbsp Saunf • 2 tbsp Khas-khas • 10 pieces of Elaichi (Cardamom) • 2 tbsp Muskmelon Seeds • A handful of Dried Rose Petals • 1½ tbsp Black Pepper • 25 Almonds • Some strands of Saffron • 1/2 litre Water • 3/4 cup Sugar • 1 litre Chilled Milk • Pistachios

• Start the thandai preparation by adding saunf, khas-khas, muskmelon seeds, cardamom, dried rose petals, almonds, saffron, and black pepper to a bowl.

• Soak all these ingredients in water for about 2-3 hours. • Take a mixer blender and mix all these soaked ingredients to make a fine paste.

• Take a muslin cloth and double-strain the thandai mixture.

• In the next step, pour some chilled milk, sugar, and a few ice cubes. • Mix well and garnish the chilled drink with chopped almonds, chopped pistachios, and dried rose petals.
