Nutrition guru and online culinary star has shared her simple recipe for making the ‘best ever’ pumpkin soup that is tasty and will give you a health boost. The recipe is perfect for those celebrating National Pumpkin Day

Today marks National Pumpkin Day (October 26), and what better way to celebrate than with a nutritious and tasty pumpkin soup?

Nutrition guru and online culinary star Luba Pavia has dished out a simple recipe that’s been hailed as the ‘best ever’ pumpkin soup.

The Australian foodie, who delights her massive Instagram following of 943,000 with her plant-based recipes, has seen her pumpkin soup video go down a treat, amassing over 13,900 likes.

Luba’s reel kicks off with her prepping her kitchen space before she starts chopping up the pumpkin. She then lays it out on parchment paper on a baking tray, followed by some sweet potato chunks on the same tray.

She continues by dicing a red onion and garlic, adding them to the tray along with a handful of cherry tomatoes. A generous drizzle of avocado oil goes over the top before she seasons it all with Italian herbs/

After roasting in the oven for 30-40 minutes or “until the vegetables are tender and the garlic is soft”, as Luba advises, she suggests: “Remove from the oven and let the garlic cool down. You can speed up the cooling process by placing garlic into a bowl with ice for 5 minutes.”

Luba has become a sensation with her latest culinary creation, as she blends together vegetables and adds soy milk along with half a cup of cashews to whip up a creamy pumpkin soup. She advises her followers: “Puree the mixture into a creamy texture, adding more milk or water if the soup is too thick.”

Once blended to perfection, Luba suggests you can “serve and enjoy right away or store it in a container to enjoy later in the week”.

In her post, Luba excitedly shared: “NO CREAM CREAMY PUMPKIN SOUP. Heads up, this is the best pumpkin soup I’ve ever made! It’s super creamy and effortless, making it perfect for lunch meal preps for the week ahead.”
